I actually went to Wings Etc. in Mishawaka when they opened in 1994 and [founder] Jim Weaver waited on my table. It was the first weekend they opened. We were regulars there for years.
I always knew I wanted to own a restaurant at some point—wasn’t quite sure exactly which one. I wanted to know if there were any Wings Etc. restaurants down in the Indianapolis market, and there were only a couple of them opened in the Indy market at that time.
So, we started looking into it; it made sense, it felt right, it felt like home. We pretty much knew it as customers. That’s when it began.
The corporate guys are always there for me…always available with whatever questions we have. It was a good experience.
I believe that, in order to be able to train your servers well, you’ve got to understand what it’s like to be a server. You have to be a guest, you have to go out to restaurants…
You don’t know everything. You never will. You learn constantly. You have to have an open mind, you have to keep learning, and keep your ego in check and know that you don’t know everything!
